Les Cotils
At Les Cotils, CCD worked to enhance the historic site with two complementary interventions: the refurbishment and extension of the original glasshouse to create a modern, comfortable coffee shop, and the creation of the Pat Merriman Peace Garden, a tranquil public sanctuary. Both projects balance respect for the historic setting with the needs of the modern-day, providing spaces that are welcoming, therapeutic, and visually engaging.

Les Cotils Coffee Shop
The coffee shop at Les Cotils is a contemporary extension to the historic glasshouse originally attached to the main house. Over time, alterations and repairs, including polycarbonate roof sheeting, had compromised both the timber structure and the building’s ability to regulate temperature, causing overheating in summer and excessive cooling in winter.
To address this, the roof and upper walls were removed, retaining only the dwarf walls and the original south partition. New walls replicate the decorative timberwork in painted Accoya with double-glazed units, and an insulated zinc roof ensures a comfortable internal environment. Additional features, such as a draft lobby and folding doors to the terrace, were carefully designed to preserve the appearance and setting of the original glasshouse.
Pat Merriman Peace Garden
The Pat Merriman Peace Garden was created in collaboration with Landscape Architect Stephen Welch as a public sanctuary for reflection, therapy, and enjoyment of the natural world. Located within a 2,000m² walled area of Les Cotils’ grounds, the garden offers scenic views over St. Peter Port, the sea, and surrounding islands.
Access is via gently sloping ramps to ensure inclusivity for all ages and abilities. The garden was made possible through a donation from The Swallow 2018 Charitable Trust, Pat Merriman’s legacy, and the significant contribution of time and expertise from CCD, Welch Design, and RG Falla Ltd.
